  • 2 cloves garlic (roasted or sautéed)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 cup unsweetened coconut milk or 1/3 cup soaked cashews
  • Salt and black pepper to taste
  • 12 oz pasta of choice

Instructions

  1. Prepare the ingredients by roasting or boiling the beets until tender and sautéing the garlic until caramelized.
