  • 2 medium Sweet Potatoes (cut into equivalent-sized chunks)
  • 3 tablespoons Avocado Oil (or olive oil)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Chili Powder
  • 1/4 teaspoon Ground Cayenne Pepper (optional)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • 1 cup Crumbled Feta Cheese (optional)
  • 1/4 cup Chopped Cilantro (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine beet and sweet potato chunks with avocado oil, salt, black pepper, chili powder, cayenne (if using), garlic powder, smoked paprika, and oregano. Toss until well-coated.
  3. Grease a baking sheet with half a tablespoon of avocado oil. Spread the vegetable mixture evenly on the sheet.
  4. Roast in the oven for about 35 minutes, stirring halfway through until tender and golden brown.
