Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 2 large eggs
  • 2 tbsp instant coffee powder
  • 1/4 cup cocoa powder
  • 1 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and dark brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, instant coffee powder, and cocoa powder. Gradually combine with the wet ingredients until just mixed.
  5. Divide the dough in half; keep one half plain while mixing cocoa into the other half. Alternate dollops of each on prepared baking sheets to create a marbled effect.
  6. Bake for 10-12 minutes until edges are golden but centers remain soft. Allow cookies to cool before transferring them to wire racks.
