  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional)

  • Extra shredded cheddar cheese for garnish

Instructions

  1. Begin by browning the ground beef in a skillet over medium-high heat until fully cooked. Drain any excess fat and add chopped onion and minced garlic, cooking until the onions are translucent.
  2. Transfer the beef mixture to your slow cooker. Add diced potatoes, sliced carrots, and pour in the chicken broth along with thyme, parsley, paprika, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  4. In the last 20 minutes of cooking, stir in heavy cream and shredded cheddar cheese. If desired, add a cornstarch mixture for thickness.
