  • ½ cup natural cocoa powder
  • ½ teaspoon instant coffee grounds (optional)
  • 1 cup tightly packed light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs + 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup + 2 Tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 8 oz cream cheese, softened (brick-style, not spreadable)
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • Food coloring
  • Colored sprinkles
  • Candy eyeballs

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 24-count mini muffin tin with baking spray.
  2. Combine the unsalted butter and semisweet chocolate chips in a large microwave-safe bowl. Microwave for 30 seconds, stir well, and repeat for another 15 seconds until melted completely.
  3. Stir in the natural cocoa powder along with instant coffee grounds if desired.
  4. Add light or dark brown sugar and granulated sugar. Stir until well combined.
  5. Add eggs one at a time, blending well after each addition. Stir in vanilla extract afterward.
  6. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
  7. Gradually add dry ingredients to wet mixture. Stir until just combined.
  8. Drop batter by approximately 1½ tablespoons into each prepared muffin cup using a cookie dough scoop if available.
  9. Transfer mini muffin tin to preheated oven. Bake for about 18 minutes or until a toothpick inserted comes out clean or with a few fudgy crumbs.
  10. Immediately take a rounded teaspoon and press it into each brownie bite to form wells for frosting.
  11. Allow brownies to cool entirely before filling them with frosting and decorating.
