  • 200g udon noodles
  • 100g shrimp
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut into matchsticks)
  • 2 tbsp neutral oil
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 2 tsp toasted sesame oil
  • salt and pepper to taste

Instructions

  1. Boil udon noodles according to package instructions; drain and rinse with cold water.
  2. Heat 1 tbsp oil in a wok; sauté minced garlic for 1 minute. Add mushrooms and stir-fry until cooked.
  3. Mix in onions and carrots; season with salt and pepper.
  4. In the same pan, add another 2 tbsp of oil; fry shrimp until pink.
  5. Toss in boiled noodles and fry on high heat until slightly crisp.
  6. Add sauce mixture and sautéed vegetables; mix well before serving.
