  • 1 bunch kale (chopped, about 4 cups)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • Salt and pepper (to taste)
  • Olive oil (for sautéing)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken sausage, breaking it apart with a wooden spoon. Cook until browned, about 5–7 minutes.
  2. Add the diced onion and sauté for 3–4 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Add diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.
  4. Mix in chopped kale and red pepper flakes if desired; cook for an additional 5 minutes.
