  • 1 (16 ounce) container blueberries (about 1.5 cups)
  • 68 tomatoes on the vine (sliced into 26 slices)
  • 2 (16 ounce) logs sliced fresh mozzarella (using 23 slices)
  • 40 basil leaves
  • 1 (12-inch) baguette
  • Olive oil, for baguette and garnishing
  • Flaky sea salt, for garnish
  • 3 tablespoons wild blueberry preserves
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar

Instructions

  1. Preheat oven to 375°F.
  2. Wash blueberries and slice tomatoes into 26 even pieces.
  3. Pat mozzarella slices dry and set aside.
  4. Use a mini star cutter to cut out mini stars from three mozzarella slices.
  5. Slice the baguette diagonally into 20 pieces, brush with olive oil, and toast on a baking sheet for about 6-8 minutes until golden brown.
  6. In a bowl, whisk together wild blueberry preserves, olive oil, and balsamic vinegar for the drizzle.
  7. Assemble the salad by layering tomatoes, mozzarella, basil, and finishing with the blueberry balsamic drizzle.
