  • 12 fresh large egg whites (room temperature)
  • 1 1/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Whipped cream (for serving)
  • Fresh strawberries, sliced (for serving)

Instructions

  1. Preheat your oven to 325°F and adjust the rack to the lower middle position.
  2. In a mixing bowl, beat egg whites until foamy. Add cream of tartar, vanilla extract, and almond extract, then beat on high until soft peaks form (about 5–6 minutes).
  3. Sift cake flour, granulated sugar, and salt together in another bowl at least five times.
  4. Gradually sift the flour mixture into the egg whites in three parts, folding gently after each addition to maintain airiness.
  5. Pour the batter into an ungreased tube pan and spread evenly.
  6. Bake for 40–45 minutes or until golden brown. Invert the pan onto a cooling rack for at least two hours before removing the cake.
  7. Once cooled, slice horizontally in half and layer with whipped cream and sliced strawberries before reassembling. Top with more whipped cream and strawberries.
