  • 1 egg
  • 1 tsp. vanilla extract
  • 10 vanilla wafers, chopped
  • 1 1/2 cup mashed bananas (about 4 medium bananas)
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 tsp. vanilla bean paste (or extract)
  • 3 TBSP instant banana pudding mix
  • ¼ cup milk
  • 1 cup powdered sugar
  • 3 vanilla wafers, finely crushed

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 loaf pan by lining it with parchment paper.
  2. In a bowl, combine cream cheese and instant banana pudding mix until smooth. Add an egg and vanilla extract, then fold in chopped vanilla wafers.
  3. In another bowl, whisk together flour, baking soda, and salt. In a stand mixer, mix mashed bananas and sugar until smooth; add vegetable oil and eggs.
  4. Gradually incorporate the flour mixture into the banana mixture until just combined.
  5. Pour half of the batter into the prepared pan, followed by the pudding filling, then top with the remaining batter.
  6. Bake for 45-55 minutes until golden brown; check doneness with a toothpick.
  7. While cooling, prepare the glaze by mixing milk with banana pudding mix and powdered sugar. Drizzle over the cooled bread.
