  • 12 oz roasted red bell peppers (drained)
  • 2.25 oz black olives (sliced, drained)
  • 2 oz grape tomatoes (halved)
  • 12 oz marinated mozzarella cheese balls (drained)
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped walnuts
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • pinch of salt

Instructions

  1. In a mason jar or small bowl, combine olive oil, red apple vinegar, Dijon mustard, dried oregano, red pepper flakes, and salt. Shake or stir well to mix thoroughly.
  2. Chop the broccoli and cauliflower into bite-sized pieces. Slice roasted peppers into strips and halve grape tomatoes.
  3. In a large mixing bowl, combine broccoli, cauliflower, roasted peppers, black olives, grape tomatoes, mozzarella cheese balls, grated parmesan cheese, and chopped walnuts.
  4. Drizzle the prepared vinaigrette over the salad mixture and toss gently until all ingredients are evenly coated.
