  • 11/4 lbs boneless, skinless chicken breasts
  • 6 tablespoons unsalted butter (divided)
  • 2 tablespoons minced shallot
  • Salt and freshly ground black pepper (to taste)
  • 1/2 cup walnuts (roughly chopped)
  • 8 fresh sage leaves (coarsely chopped)
  • 1 tablespoon chopped fresh parsley
  • Freshly ground nutmeg (optional)

Instructions

  1. Boil salted water in a large pot for the pasta.
  2. Pound chicken breasts between plastic wrap to an even thickness, then slice into thin strips.
