  • 1 cup shredded carrots
  • 3 cups old-fashioned oats
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • For the frosting: 1 cup softened salted butter
  • 8 ounces cream cheese
  • 4 cups powdered sugar

Instructions

  1. Shred the carrots and pat dry to remove excess moisture.
  2. In a mixing bowl, cream together the softened butter and sugars until light and fluffy. Add eggs one at a time, mixing well after each addition, followed by vanilla.
  3. Stir in shredded carrots and oats until combined.
  4. In another bowl, sift together flour, baking soda, salt, cinnamon, and ginger. Gradually add this mixture to the wet ingredients until just combined.
  5. Chill dough for 20–30 minutes while preheating oven to 350°F (175°C).
  6. Scoop tablespoon-sized portions onto a lined baking sheet and bake for 12–15 minutes until edges are golden brown.
  7. Allow cookies to cool before spreading frosting between two cookies.
