  • 9 oz. button mushrooms, sliced
  • 1 1/3 cups cooked shredded chicken breast
  • 4 medium avocados
  • 1/4 cup heavy cream
  • 1/4 cup canned corn
  • 1/4 cup blue cheese, crumbled
  • 2 teaspoons lime juice
  • Salt, pepper, and cajun seasoning to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt the butter and sauté sliced mushrooms until soft (about 2-3 minutes).
  3. Add shredded chicken to the skillet with salt, pepper, and cajun seasoning. Stir well, then lower the heat and mix in heavy cream for an additional minute before removing from heat.
  4. Combine the chicken mixture with corn and chopped chives in a bowl.
  5. Halve avocados, remove pits, season with salt and pepper, and brush lime juice over them.
  6. Stuff each avocado half generously with the chicken mixture and top with crumbled blue cheese.
  7. Bake for about 5 minutes until heated through.
