  • 1 1/2 pounds flank steak
  • 1/2 cup red onion, minced
  • 1/3 cup parsley, flat leaf, minced
  • 1 tablespoon oregano, fresh or 1 teaspoon dried oregano
  • 1 tablespoon garlic, minced
  • 1/3 cup olive oil, extra virgin
  • 3 tablespoons red apple vinegar
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon lemon zest
  • 1 teaspoon coarse salt
  • 1/3 teaspoon black pepper
  • Salt and pepper to taste

Instructions

  1. Prepare the chimichurri sauce by mixing minced red onion, parsley, oregano, garlic, olive oil, red apple vinegar, crushed red pepper, lemon zest, salt, and black pepper in a bowl. Let it sit for at least 15 minutes.
  2. Preheat your grill to 500°F and then reduce to 400°F. Season the flank steak with salt and pepper on both sides.
  3. Grill the steak for 5-6 minutes on each side until desired doneness is achieved. Remove from grill and let it rest under foil for 10 minutes.
  4. Slice against the grain into thin strips and drizzle with chimichurri sauce before serving.
