  • 3/4 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 5 large eggs, at room temperature
  • 1/2 cup fresh vegetable oil
  • 1 teaspoon vanilla extract
  • 2 sticks (227 grams) unsalted butter, at room temperature
  • 1 cup (270 grams) creamy conventional peanut butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 2 1/2 cups (313 grams) powdered sugar, sifted
  • 4 ounces (113 grams) semisweet or bittersweet chocolate, finely chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans.
  2. Melt unsalted butter and semisweet chocolate together until smooth. Stir in granulated and dark brown sugars, followed by eggs one at a time. Mix in vegetable oil and vanilla extract.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and sea salt. Fold into the wet mixture until just combined.
  4. Divide batter among pans and bake for about 25 minutes or until a toothpick inserted comes out with moist crumbs. Cool for 10 minutes before transferring to a cooling rack.
