  • 3 large eggs
  • 55 g light brown sugar
  • 65 g granulated sugar
  • 1 tsp vanilla extract
  • 65 g plain flour
  • 15 g cocoa powder
  • 75 g dark chocolate (75%)
  • 400 g fresh raspberries
  • 100 g granulated sugar (for mousse)
  • 480 ml double cream (cold)
  • 2¼ tsp powdered vegan gelatin
  • 45 ml fresh lemon juice

Instructions

  1. Preheat the oven to 180°C (350°F) and grease two 9-inch round cake pans.
  2. In a mixing bowl, beat eggs and sugars until pale. Add vanilla extract.
  3. Sift flour, cocoa powder, baking powder, and salt; fold into the egg mixture.
  4. Gently mix in melted dark chocolate.
  5. Divide batter between pans and bake for about 20 minutes. Cool completely.
  6. For the mousse, bloom vegan gelatin in lemon juice, blend raspberries with sugar until smooth.
  7. Whip cream to soft peaks and fold in raspberry puree and gelatin mixture.
  8. Layer sponge with mousse in a serving plate; chill for at least 4 hours before serving.
