Ingredients

Scale
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 cup light brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 2 to 3 teaspoons cinnamon
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt (or to taste)
  • 6 ounces cream cheese (softened)
  • 1/4 cup unsalted butter (for frosting)
  • 1 1/2 cups confectioners’ sugar
  • 1/2 teaspoon salt (or to taste)
  • Cinnamon (for garnishing)

Instructions

  1. Preheat your oven to 350°F and line an 8-by-8-inch baking pan with aluminum foil, greasing it with cooking spray.
  2. In a microwave-safe bowl, melt the butter and let it cool slightly. Whisk in the egg, followed by the brown sugar, vanilla extract, and cinnamon until smooth.
  3. Gently fold in the flour and salt until just combined.
  4. Pour the batter into the prepared pan and smooth out the top with a spatula. Bake for 20 to 24 minutes until set in the center. Allow cooling on a wire rack before frosting.
  5. For the frosting, beat together softened cream cheese, butter, confectioners’ sugar, vanilla extract, and salt until light and fluffy.
  6. Once cooled, frost the bars evenly and garnish with a sprinkle of cinnamon before cutting them into squares.
