  • ½ tsp baking powder
  • ¾ cup unsalted butter, softened
  • ½ cup light brown sugar
  • ½ cup white sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups unsweetened shredded coconut (divided)

  3. In another bowl, cream together butter and sugars until fluffy. Add the egg and vanilla; mix until combined.
  4. Gradually add dry ingredients to the wet mixture along with 1½ cups shredded coconut. Stir gently.
  5. Shape dough into balls using a cookie scoop and roll tops in remaining coconut.
  6. Place on prepared sheets about 2 inches apart and chill in the fridge for 30 minutes.
  7. Bake for 13–15 minutes until golden around edges; cool on racks before serving.
