  • 1 (14 or 16 oz.) package broccoli florets
  • 1 cup shredded cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups cracker crumbs (Ritz or Keebler Club)
  • 1/4 cup butter, melted

Instructions

  1. Thaw and drain the broccoli florets. Microwave for about 5 minutes until tender.
  2. In a mixing bowl, combine thawed broccoli, 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt until well mixed.
  3. Transfer the mixture into a greased baking dish and top with the remaining cheddar cheese.
  4. In another bowl, mix cracker crumbs with melted butter and sprinkle over the casserole.
  5. Preheat oven to 350°F (175°C) and bake for 45 to 50 minutes until bubbly and golden brown.
