  • 10 ounces cherry tomatoes (halved)
  • 4 cups fresh spinach
  • 1 cup 2% milk
  • 1/2 cup grated parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil; cook the mini penne according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil, diced onions, garlic, and salt. Sauté for about 3 minutes until onions are translucent.
  3. Stir in halved cherry tomatoes and cook for another 3–5 minutes until softened.
  4. Add fresh spinach and sauté until wilted, about 3 minutes.
  5. Pour in the milk and let simmer gently for about 2 minutes.
  6. Combine the drained pasta with the sauce in the skillet; toss well to combine.
