  • 0.25 cup Avocado Oil
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Toasted Sesame Oil
  • 2 tablespoons Lower-Sodium Tamari/Soy Sauce
  • 1 tablespoon Freshly Grated Ginger
  • 1 clove Garlic
  • 1 lb Cucumbers
  • 1 cup Shelled Edamame
  • 1 large Avocado
  • 0.5 cup Green Onion
  • 2 tablespoons Toasted Sesame Seeds
  • a pinch Aleppo Pepper Flakes
  • 23 tablespoons Fresh Basil

Instructions

  1. In a mixing bowl, whisk together avocado oil, rice vinegar, toasted sesame oil, tamari/soy sauce, grated ginger, and minced garlic until well combined.
  2. Slice cucumbers into rounds or half moons and cut avocado into cubes. Thinly slice the green onions.
  3. In the mixing bowl with the dressing, add sliced cucumbers, shelled edamame, avocado cubes, green onions, toasted sesame seeds, Aleppo pepper flakes, and fresh basil if using.
  4. Gently toss everything together until well coated with dressing. Taste and adjust seasoning if necessary before serving.
