  • 6 oz uncooked mini pasta shells
  • 2 mini cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 4 oz colby jack cheese, cubed
  • 3 Tbsp red onion, finely chopped
  • 8 oz turkey bacon, cooked (or another protein)
  • 2/3 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 2 Tbsp sour cream
  • 1/4 cup whole milk
  • 3 garlic cloves, minced
  • 1/4 tsp salt, or to taste
  • 1/4 tsp ground black pepper, or to taste
  • 2 Tbsp lemon juice
  • 1/2 tsp dijon mustard
  • 1 Tbsp olive oil

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain and rinse under cold water.
  2. In a small bowl or jar, mix together the dressing ingredients until well combined.
  3. Cook turkey bacon until crispy; chop into small pieces.
  4. In a large mixing bowl, combine cooled pasta with cucumbers, tomatoes, cheese, red onion, and turkey bacon.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill for at least one hour before serving.
