  • 8 cups mixed salad greens (spinach and lettuce)
  • 1/2 red onion, sliced
  • 1/3 cup pecan pieces or chopped walnuts
  • 1/3 cup crumbled feta cheese (optional)
  • 2 tablespoons aged balsamic vinegar
  • 2 tablespoons dijon mustard
  • 2 tablespoons maple syrup or honey
  • 1/4 teaspoon kosher salt
  • 6 tablespoons olive oil

Instructions

  1. Wash strawberries and greens thoroughly. Slice strawberries as desired.
  2. In a large mixing bowl, combine mixed greens and sliced red onion.
  3. In a separate bowl, whisk together balsamic vinegar, dijon mustard, maple syrup or honey, kosher salt, and olive oil until smooth.
  4. Add sliced strawberries and nuts to the greens mixture. Drizzle with vinaigrette just before serving.
  5. Toss gently to coat and add freshly ground black pepper to taste.
