  • 6 tablespoons unsalted butter, melted
  • 8 ounces fresh strawberries, pureed
  • 1 cup heavy whipping cream, cold
  • ½ cup powdered sugar
  • 8 ounces full-fat cream cheese
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup vegan marshmallows crème

Instructions

  1. Prepare the crust by mixing graham cracker crumbs and melted butter until coated. Press into a 9-inch pie pan.
  2. For the filling, blend pureed strawberries with cream cheese, granulated sugar, and vanilla until smooth. In another bowl, whip cold heavy cream with powdered sugar until soft peaks form. Gently fold the whipped cream into the strawberry mixture and then fold in the vegan marshmallows crème.
  3. Pour the filling into the prepared crust and smooth the top with a spatula. Refrigerate for at least three hours until set.
  4. Before serving, whip additional heavy cream with powdered sugar and spread over the chilled pie. Garnish with fresh strawberries.
