  • 1/2 cup chopped maraschino cherries
  • 2 tablespoons maraschino cherry juice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans
  • 1/2 cup mashed overripe banana

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare mini loaf pans with baking spray.
  2. In a large bowl, combine flour, salt, and baking powder. In another bowl, whisk together milk, eggs, and vegetable oil.
  3. Mix the wet ingredients into the dry ingredients until just combined.
