  • 16 oz rotini pasta
  • 3 cups cooked chopped chicken
  • 20 oz canned pineapple tidbits (drained)
  • 1 cup finely diced celery
  • 1 cup halved red seedless grapes
  • 1 cup halved green seedless grapes
  • 2 cups lightly salted cashew halves & pieces
  • 1 cup ranch dressing
  • 1 cup mayonnaise
  • 1/3 cup reserved pineapple juice
  • Salt to taste

Instructions

  1. Cook rotini pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine chopped chicken, drained pineapple tidbits, celery, grapes, and cashews.
  3. In a separate bowl, whisk together ranch dressing, mayonnaise, reserved pineapple juice, and salt until smooth.
  4. Add the cooled pasta to the salad mixture and pour the dressing over it. Stir gently to coat everything evenly.
  5. Cover and refrigerate for at least 4 hours before serving for the best flavor.
