  • 9 oz fresh cheese tortellini
  • 9 oz fresh spinach & cheese tortellini
  • 1 green bell pepper
  • 1 red bell pepper
  • ½1 cup corn (steamed or canned)
  • 1 heaping cup grape/cherry tomatoes
  • 4 oz cheddar cheese (cubed)
  • ½ cup extra virgin olive oil
  • ½ cup white apple vinegar
  • 2 TBSP Italian seasoning blend
  • ½ TBSP garlic powder
  • ½ tsp sea salt
  • ¼ tsp black pepper

Instructions

  1. Cook the tortellini in boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, whisk together the dressing ingredients in a bowl or shake in a mason jar until combined.
  3. Chop the vegetables into bite-sized pieces.
  4. In a large mixing bowl, combine the cooked tortellini, chopped vegetables, cubed cheese, and half of the dressing. Mix well.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Drizzle additional dressing before serving if desired.
