  • 4 bell peppers (green or yellow)
  • 4 large beefsteak tomatoes
  • 1 large yellow onion
  • 3 garlic cloves
  • ¾ cup pine nuts
  • ¾ cup dried cranberries (or raisins)
  • 1 cup arborio rice
  • Fresh herbs: dill, parsley, mint
  • Olive oil, salt, pepper, sugar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Hollow out the peppers and tomatoes; reserve the tops.
  3. Blend the tomato flesh and juice until smooth; reserve some for later.
  4. Sauté onion and garlic in olive oil until softened.
  5. Mix in blended tomatoes and arborio rice; cook until liquid reduces.
  6. Stir in herbs, pine nuts, cranberries/raisins, and olive oil; season to taste.
  7. Fill hollowed vegetables with the rice mixture and cap with reserved tops.
  8. Bake covered for an hour; then uncovered for another thirty minutes.
