  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Juice
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 2 1/2 cups Guava Nectar or Juice (for glaze)
  • 8 oz Cool Whip (thawed)
  • 1 cup Sweetened Coconut Flakes

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine strawberry cake mix, guava nectar or juice, eggs, melted coconut oil, cream cheese, granulated sugar, and vanilla extract. Mix until smooth.
  3. Pour batter into the prepared pan and bake for about 30 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
  4. For the glaze, combine guava nectar or juice, granulated sugar, cornstarch, and water in a saucepan over medium heat. Stir until thickened.
  5. Once the cake is cool, pour the glaze over it, top with Cool Whip, and sprinkle sweetened coconut flakes on top.
