  • 1/2 cup canned full-fat coconut cream
  • 1 tablespoon creamy tahini, almond, or cashew butter
  • 2 1/2 cups shredded unsweetened coconut, toasted
  • 12 ounces dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the butter, maple syrup, and vanilla until light and fluffy.
  3. Gradually add whole wheat flour, baking powder, and salt until combined; if crumbly, add water as needed.
  4. Roll out the dough to about 1/4 inch thick and cut into shapes using cookie cutters.
  5. Bake for 10-12 minutes until golden brown; cool on a wire rack.
  6. For the topping, boil maple syrup and coconut cream until thickened; stir in tahini and toasted coconut.
