  • 4 cans tuna, drained
  • 1 large cucumber, diced
  • 1/2 small red onion, finely chopped
  • 3 ripe tomatoes, chopped
  • 1 cup artichoke hearts, quartered
  • 1/2 cup Kalamata olives, halved
  • 1 large handful fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1.5 tbsp Italian seasoning
  • 3/4 cup feta cheese, crumbled
  • 1/3 cup extra virgin olive oil
  • 1.5 tbsp red apple vinegar
  • Salt and black pepper to taste

Instructions

  1. Prepare your ingredients by chopping vegetables and draining the tuna.
  2. In a large mixing bowl, combine the drained tuna with cucumber, red onion, tomatoes, artichoke hearts, Kalamata olives, and parsley.
