- 4 cans tuna, drained
- 1 large cucumber, diced
- 1/2 small red onion, finely chopped
- 3 ripe tomatoes, chopped
- 1 cup artichoke hearts, quartered
- 1/2 cup Kalamata olives, halved
- 1 large handful fresh parsley, chopped
- 4 cloves garlic, minced
- 1.5 tbsp Italian seasoning
- 3/4 cup feta cheese, crumbled
- 1/3 cup extra virgin olive oil
- 1.5 tbsp red apple vinegar
- Salt and black pepper to taste
- Prepare your ingredients by chopping vegetables and draining the tuna.
- In a large mixing bowl, combine the drained tuna with cucumber, red onion, tomatoes, artichoke hearts, Kalamata olives, and parsley.
- In a separate bowl, whisk together minced garlic, Italian seasoning, feta cheese, olive oil, and vinegar. Season with salt and black pepper.
