Instructions

  1. Preheat the oven to 400°F and line baking sheets with parchment paper.
  2. In a mixing bowl, combine warm water and yeast; let sit until frothy (about 5 minutes).
  3. Add barley malt syrup (or brown sugar), flour, and salt; mix until a dough forms and knead for about 5 minutes until smooth.
  4. Divide the dough into equal pieces (about 10) and roll each into a long rope; twist into pretzel shape.
  5. Prepare the lye bath by mixing food-grade lye with room temperature water carefully.
  6. Dip each pretzel into the lye bath for about 30 seconds; place on prepared baking sheets.
  7. Sprinkle with coarse salt and bake for about 16 minutes until golden brown.
