  • 1 20 oz. bag refrigerated cheese tortellini
  • 1 cucumber (peeled, sliced, and quartered)
  • 1 pint cherry tomatoes (halved)
  • 1 6 oz. can black olives (drained and halved)
  • 1 orange bell pepper (chopped)
  • 2 tablespoons chopped pepperoncini
  • 8 oz. fresh mozzarella balls (quartered)
  • 8 oz. chopped turkey slices
  • Homemade Italian dressing

Instructions

  1. Prepare Italian dressing according to your recipe and refrigerate.
  2. Boil the tortellini in salted water as per package instructions; drain and cool.
  3. In a large bowl, combine cooled tortellini with half the dressing.
  4. Add cucumber, cherry tomatoes, olives, bell pepper, pepperoncini, mozzarella, and turkey; toss gently.
  5. Chill for at least 30 minutes before serving; add remaining dressing just prior to serving.
