  • 1 packet Active Dry Yeast (Approx. 2 1/4 tsp)
  • 2 cups Bread Flour
  • 2 cups All-Purpose Flour
  • 2 tsp Salt
  • 6 tbsp Olive Oil
  • 1 jar Raspberry Preserves
  • 2 cups Confectioners' Sugar
  • 24 tbsp Whole Milk

Instructions

  1. In a mixing bowl, combine warm water and sugar. Sprinkle yeast over the top and let sit for 5-10 minutes until frothy.
  2. In another bowl, whisk bread flour, all-purpose flour, and salt together.
  3. Gradually add the yeast mixture and olive oil to the dry ingredients, stirring until a dough forms.
  4. Knead on a floured surface for about 5-7 minutes until smooth.
  5. Place in an oiled bowl covered with a damp cloth and let rise in a warm place for about 1 to 1.5 hours or until doubled in size.
  6. Preheat oven to 375°F (190°C). Punch down dough, spread onto a parchment-lined baking sheet, creating dimples with fingers, and let rise again for about 30 minutes.
  7. Spread raspberry preserves over risen dough and bake for approximately 22 minutes or until golden brown.
  8. Mix confectioners' sugar with milk for glaze consistency; drizzle over warm focaccia before slicing.
