  • 3 cups raspberries
  • 1 teaspoon xanthan gum or 2 teaspoons arrowroot powder
  • 1/3 cup + 1/4 cup sugar-free sweetener
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/4 cup golden monk fruit
  • 1/4 cup walnuts
  • 1/4 cup pecans
  • 2 tablespoons hemp hearts
  • pinch salt
  • 3/4 cup unsalted butter, cold & cut into cubes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine raspberries, xanthan gum or arrowroot powder, 1/3 cup sugar-free sweetener, and vanilla extract. Set aside.
  3. In a food processor, blend almond flour, remaining sugar-free sweetener, walnuts, pecans, hemp hearts, salt, and cubed butter until crumbly.
  4. Spread the raspberry mixture evenly in a square baking dish and top with the crumble.
  5. Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
