  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 cup sour cream or plain Greek yogurt
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tsp vanilla extract
  • 1½ cups fresh blueberries + 1 tbsp flour (for coating)
  • 1 cup powdered sugar (sifted)
  • 2 –3 tbsp fresh lemon juice for glaze
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 loaf pan and line it with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, whisk together vegetable oil, granulated sugar, sour cream or Greek yogurt, eggs, fresh lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Fold gently until just combined; be careful not to overmix.
  5. Toss the blueberries with 1 tablespoon of flour to prevent them from sinking. Gently fold them into the batter using about 3–4 strokes.
  6. Pour the batter into your prepared loaf pan and smooth out the top. Bake for about 55–65 minutes until a toothpick inserted in the center comes out clean. If it's browning too quickly at around 40 minutes, tent it with foil.
  7. While your bread cools in the pan for about 15 minutes, mix together powdered sugar, fresh lemon juice, and optional lemon zest. Pour this glaze over the warm loaf before slicing.
