  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • ½ cup granulated sugar
  • 1 cup unsalted butter
  • ¾ cup powdered sugar
  • 1 large egg, divided
  • ½ teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 1 ½ tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 3 â…“ cups all-purpose flour
  • Blue/purple food coloring (optional)

Instructions

  1. Prepare the blueberry reduction by boiling blueberries with lemon juice and sugar until thickened. Blend until smooth and strain.
  2. In a stand mixer, cream butter and powdered sugar. Add egg yolk, vanilla, salt, lemon juice, and zest; mix well.
  3. Gradually add sifted flour until dough forms. Divide into four balls; knead blueberry sauce into three balls for layers.
  4. Roll out dough layers, stack them with egg-white glue in between, then cut into shapes.
  5. Freeze briefly before baking at 350°F (175°C) for about 7 minutes.
