  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 cup uncooked long-grain rice (basmati or jasmine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook rice according to package directions.
  2. In a mixing bowl, combine 2 tablespoons olive oil, lemon juice, and oregano. Add chicken and marinate for at least 15 minutes.
  3. Heat remaining olive oil in a skillet over medium-high heat. Cook marinated chicken for 5-7 minutes per side until internal temperature reaches 165°F (74°C).
  4. Let chicken rest before slicing into strips.
  5. Mix cherry tomatoes, feta cheese, and parsley in a small bowl.
  6. Assemble bowls by dividing cooked rice, topping with sliced chicken and tomato-feta mixture.
