  • 4 large russet potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 12 teaspoons dried oregano
  • ½ cup chopped fresh parsley
  • 1 large tomato, diced
  • ½ cup chopped pitted Greek olives
  • ½ cup crumbled feta cheese
  • ½ cup Greek tzatziki sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Poke holes in each potato with a fork, rub with olive oil, sprinkle with salt, and place on a baking sheet.
  3. Bake potatoes for about 60–75 minutes until soft and skins are crispy.
  4. While baking, prepare toppings: chop parsley and tomato, crumble feta, and chop olives.
  5. After baking, let the potatoes rest for 5 minutes. Cut lengthwise slits and scoop out the flesh into a bowl.
  6. Mix scooped potato with olive oil, salt, pepper, and oregano until fluffy.
  7. Spoon mixture back into potato skins and top with tzatziki sauce, olives, feta cheese, tomato, and parsley.
