  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced (any color)
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/3 cup olive oil
  • 1/4 cup red apple vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. 1. Cook the pasta in salted boiling water until al dente (8–10 minutes). Drain and rinse under cold water.
  2. 2. In a mixing bowl, combine cooked pasta with cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, Kalamata olives, parsley, and basil.
  3. 3. In a separate bowl, whisk together olive oil, red apple vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
