  • 2 (5-ounce) cans solid white tuna (in water)
  • 1/2 cup diced onions
  • 1 pint grape tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1 cup diced cucumber
  • 3 tablespoons capers, drained
  • 3 tablespoons freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons plain yogurt
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Cook the pasta according to package instructions in a medium pot of salted boiling water until al dente. Drain and cool.
  2. While the pasta cools, chop the onions, halve the tomatoes, pit the olives if necessary, and dice the cucumber.
  3. In a mixing bowl, whisk together lemon juice, olive oil, yogurt, Dijon mustard, garlic powder, salt, and pepper to create the vinaigrette.
  4. In a large bowl, combine cooled pasta with drained tuna and prepared vegetables. Pour the dressing over and toss gently until evenly coated.
