  • 30 Oreo Cookies (for crust)
  • 5 tablespoons unsalted butter (melted)
  • 24 oz cream cheese (full-fat, brick-style)
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup sour cream
  • 3 large eggs
  • 4 oz semi-sweet chocolate (for ganache)
  • 1/2 cup whipping cream

Instructions

  1. Preheat oven to 325°F (170°C). Wrap a 9-inch springform pan with aluminum foil.
  2. Crush 30 Oreo cookies into fine crumbs and mix with melted butter. Press firmly into the bottom of the prepared pan.
  3. Beat cream cheese and sugar until smooth; add cornstarch, sour cream, vanilla extract, and eggs one at a time.
  4. Fold in chopped Oreo cookies and pour over the crust.
  5. Bake in a water bath for about 55 minutes until set but slightly jiggly.
  6. Cool gradually in the oven with the door ajar, then refrigerate for at least four hours.
  7. For the ganache, heat whipping cream to simmering, pour over chopped chocolate, stir until smooth.
  8. Pour ganache over chilled cheesecake before serving.
