  • 1 lb fresh strawberries, hulled and thinly sliced
  • 2 cups fresh blueberries, rinsed and dried
  • 16 oz cold mascarpone cheese
  • 2 cups heavy whipping cream (minimum 36% fat)
  • 14 oz honey graham crackers
  • 0.75 cup powdered sugar
  • 1 tbsp pure vanilla bean paste
  • 2 tbsp granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest, finely microplaned

Instructions

  1. In a medium bowl, combine sliced strawberries with granulated sugar, lemon juice, and zest. Let sit for about 15 minutes to macerate.
  2. In a stand mixer, whip together cold heavy cream, mascarpone cheese, powdered sugar, vanilla bean paste, and salt until stiff peaks form.
  3. Spread half of the mascarpone mixture on the bottom of a 9×13 inch dish to anchor the crackers.
  4. Layer honey graham crackers over the cream base, followed by one-third of the remaining cream and one-third of the macerated strawberries and blueberries.
  5. Repeat layering process until all ingredients are used, finishing with a final layer of crackers topped with remaining cream and extra berries for decoration.
  6. Cover tightly with plastic wrap and refrigerate for at least 12 hours before serving.
