  • ½ cup vegetable oil
  • 1 stick unsalted butter (melted)

  • 1 cup buttermilk
  • 3 teaspoons red gel food coloring
  • 1 teaspoon distilled white vinegar
  • 16 ounces cream cheese (at room temperature)
  • 2 sticks unsalted butter (at room temperature)
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar (sifted)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Mix hot coffee and cocoa powder until smooth; set aside to cool.
  3. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  4. In a large bowl, beat melted butter and sugar until fluffy.
  5. Add eggs one at a time, then incorporate buttermilk, vinegar, food coloring, and cooled cocoa mixture until well combined.
  6. Gradually mix in dry ingredients until just combined; do not overmix.
  7. Divide batter between pans and bake for approximately 30-35 minutes or until a toothpick comes out clean.
  8. Cool cakes in pans for about 10 minutes before transferring to a rack.
