  • 1 1/2 medium red bell peppers
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 Tbsp fresh lemon juice
  • 3 Tbsp tahini
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • 2 Tbsp olive oil

Instructions

  1. Preheat your oven's broiler. Core and seed the red peppers, then cut them into quarters.
  2. Arrange the pepper pieces on a baking sheet and broil for 10-15 minutes until charred.
  3. Transfer the charred peppers to a resealable bag; seal and let steam for 10 minutes before peeling.
  4. In a food processor, combine peeled peppers, chickpeas, lemon juice, tahini, garlic, salt, and cumin; blend until smooth.
  5. Slowly add olive oil while blending until creamy. Adjust consistency with water if desired.
  6. Serve garnished with diced pepper and parsley alongside pita chips or veggies.
