  • 3 medium boneless, skinless chicken breasts
  • 1 ½ tablespoons taco seasoning mix
  • 2 tablespoons olive oil
  • ½ cup diced onion
  • 15 ounces tomato sauce
  • 3 cloves diced garlic
  • Soft white or yellow corn tortillas
  • 2 cups chopped Romaine lettuce
  • 1 ½ cup shredded Monterey Jack cheese
  • 5 sliced radishes
  • 1 chopped avocado

Instructions

  1. Preheat the oven to 350°F (175°C). Coat chicken breasts with olive oil and sprinkle with taco seasoning. Bake for about 30 minutes or until cooked through.
  2. Once cooled, shred the chicken using a fork. In a saucepan, cook the diced onions in remaining olive oil until tender. Add shredded chicken, tomato sauce, and remaining spices; simmer on medium-low heat for 15 minutes.
  3. Warm tortillas and assemble the tacos by adding a spoonful of chicken filling and topping with your choice of lettuce, cheese, radishes, and avocado.
