  • 3 cups all-purpose flour

  • 1/2 tsp baking soda

  • 2 tsp strawberry extract (optional)
  • 1/2 tsp red food coloring (optional)
  • 2 cups powdered sugar (for glaze)
  • 1 tsp pure lemon juice (for glaze)

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a loaf pan.
  2. Blend half of the strawberries to make puree; reserve some for the glaze.
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine flour, salt, baking soda, and optional food coloring in another bowl.
  6. Alternate adding dry ingredients with buttermilk to the creamed mixture.
  7. Fold in strawberry puree gently.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for approximately 70 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 15 minutes before transferring to a cooling rack.
