  • 3 oz box of strawberry Jello
  • 1 stick unsalted butter (softened)
  • 7.5 oz vegan marshmallow fluff
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a bundt cake pan with non-stick spray.
  2. In a large mixing bowl, combine the strawberry cake mix, eggs, water, vegetable oil, and strawberry Jello until smooth.
  3. Pour the batter into the prepared bundt pan and bake for 35-40 minutes or until a toothpick comes out clean.
  4. Allow the cake to cool in the pan for about 10 minutes before transferring it to a cooling rack until completely cooled.
  5. For the filling, beat softened butter in a bowl until light and fluffy. Mix in vegan marshmallow fluff, powdered sugar, and vanilla extract until well combined.
