  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Prepare the sweet potato by microwaving or roasting until soft, then mash until smooth.
  2. In a mixing bowl, cream together softened butter with brown and granulated sugars until fluffy. Add egg, vanilla extract, and mashed sweet potato; mix well.
  3. In another bowl, whisk together flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  4. Gradually combine dry ingredients into wet mixture until just combined; avoid overmixing.
  5. Scoop tablespoon-sized dough balls onto parchment-lined baking sheets.
  6. Bake in a preheated oven at 350°F for about 10–12 minutes until edges are golden but centers remain soft.
  7. Cool on the pan for 5 minutes before transferring to a wire rack.
